We have specialised tools for sharpening knives and scissors. For Japanese knives we use a water cooled Tormek T7 sharpener. This is followed by honing using waterstones and leather stropping. For European knives we use a water cooled German F.Dick SMT 160T. Again this is followed with honing using waterstones and leather stropping. We sharpen scissors using an Ookami Gold in conjunction with Twice As Sharp scissor sharpener.
