We have specialised tools for sharpening knives. For Japanese knives we use a water cooled Tormek T7 sharpener. This is followed by honing using waterstones and leather stropping. For European knives we use a German F.Dick SMT 160T and a Cozzini Primedge Hollow Grinder. Again, this is followed with honing using waterstones and leather stropping.
